Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup heavy cream
- Fresh basil for serving
How to Make Creamy Tomato Soup
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes, until softened.
- Add the minced garlic and cook for another 30 seconds, stirring frequently so the garlic does not burn.
- Add the diced tomatoes, vegetable broth, dried basil, oregano, salt, and black pepper. Stir everything together.
- Bring the soup to a gentle simmer. Reduce the heat and let it cook for about 20 minutes, allowing the flavors to come together.
- Carefully blend the soup until smooth using an immersion blender. If using a regular blender, work in small batches and follow the blender's safety instructions.
- Return the soup to low heat and stir in the heavy cream. Warm gently for another 2–3 minutes without bringing it to a strong boil.
- Taste and adjust the seasoning if needed. Serve warm with fresh basil and your favorite bread.
Kitchen Tip
For a smoother soup, blend it a little longer. If you prefer a thicker texture, let the soup simmer for a few extra minutes before adding the cream.
What to Serve With Tomato Soup
A bowl of creamy tomato soup pairs perfectly with toasted bread or a classic grilled cheese sandwich. For a lighter meal, serve it with a fresh green salad or a few roasted vegetables.
You can also add a little grated Parmesan, fresh basil, or a small drizzle of olive oil just before serving.
A Cozy Everyday Favorite
This soup is a great recipe to keep on hand when you want something warm and comforting without a complicated cooking process. Most of the preparation can be done in one pot, making cleanup simple as well.
Good to Know
The soup can be prepared ahead of time and gently reheated before serving. If it becomes too thick after chilling, add a small splash of vegetable broth while reheating.
Enjoy your meal!
