Ingredients

  • 4 boneless, skinless chicken thighs
  • 1½ pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons fresh parsley, chopped

How to Make It

  1. Preheat the oven to 425°F (220°C). Lightly grease a large baking dish or oven-safe skillet.
  2. Place the halved potatoes in the dish. Add olive oil, minced garlic, oregano, paprika, salt, and black pepper, then toss everything together.
  3. Arrange the chicken thighs over the potatoes and season the chicken lightly with the remaining spices.
  4. Add the lemon slices around the chicken and potatoes, spreading them throughout the dish.
  5. Bake for about 35–40 minutes, until the chicken is cooked through and the potatoes are tender and golden.
